2 inches or 3 inches of latex??

I have a luxury firm mattress which provides great support but is a little hard.  As I have lower back issues I don't want to sacrifice too much support for comfort.  As I am over 200 lbs. I was thinking 3" is probably better than 2", but my question is, would that give up too much support?  Thanks.

Two inches is not enough.  But try it and you will probably see you need more.  MHI.

I'd go with 3" too, especially if you are a side sleeper at all.  You may actually have to go to 4" if the mattress is really firm, but I wouldn't jump that far yet.  Some of it depends on whether you are looking for a 14 ILD, 19 ILD or higher.

As others have mentioned, it definitelly depends on what position you sleep in, and it may depend on what ILD you choose, but If all you are looking for is a little softness on top, I would strongly recommend 2". I tried 3" of both 19 ILD and 28 ILD over a fairly firm spring mattress, and it was too deep to provide support for my lower back. It was good fo side sleeping but thats not my natural sleeping position - Im a back sleeper. I gave it about a month to see if I would get used to it, but no dice. I took off the topper and am feeling relief.

What if you are a stomach sleeper?  I am trying to figure out if I should go with 2 or 3 inches.  We like a firm mattress and are looking at roughly a 6" firm core below a 2 or 3 inch soft top? http://www.latexmattresscompany.com/ possible setup.

For a stomach or back sleeper, I would definitely go with 2" or less.  It's still a matter of feel, but I wouldn't start with 3" for a back or side sleeper unless the base is really firm and the topper is also fairly firm.

Sounds good.  I will start with 2" and work from that.

That's probably the right move.  You can always add an inch, but you cannot make a 3" into a 2".  Of course it is nice to have 1 piece (althought 3" pieces can be big and awkward to move), but I have found that flexibilty is very important.
