Yes, I agree that the intent of individual coils is to contour to the body, but there is more to consider than just their profile response.
Specifically, how the body's weight is distributed (pressure relief) across the coils, and in particular, across neighboring coils when some coils are carrying much heavier bearing points like shoulders and hips or butts than that of their immediate neighbor coils. How well your body weight is distributed across the individual coils...

We were told that you don't want more than a couple inches between slats, so you might want to consider a solid foundation. Our local mattress manufacturer sold us a bunky board along with the mattress that works great and doesn't add much height.

savvyrest.com recommends dunlop instead of talalay for people with back problems. they have good info on their site for choosing the type and firmness of latex, though i don't see them...

- I don't believe I have read anything from anyone who had a traditional innerspring mattress that developed a mold problem. Yes it might be possible that given "high humidity" or storage problems, etc, that anything can develop mold, but I don't believe under normal wear and tear, that traditional innerspring mattresses create a problem

I went and looked at what I believe is the bed you have (Luxury Performance Organic). I had been focusing on pure Latex, but the one you have seems to be a good hybrid mix of various layers. I was REALLY surprised to see the horsehair. We had a friend who had a PURE horsehair mattress, and it was like sleeping on a concrete slab. Since this is only a layer, my assumption is that the stiffness of the horsehair is modified by the various layers of latex. While comfort undeniably is and always will be the number one contributing factor for the perfect mattress, I do feel that there is an often overlooked aspect: and that is how the mattress contributes to your health. Remember that you spend a third of your life (!!!) in bed - let that sink in!
While comfort alone may be perceived as healthy, there are other factors that should be considered even if the mattress is comfortable, such as what the cover of the mattress is made of and what material is used inside (PU/Memory Foam/Latex/etc.). Just as an example: there are many chemical components that MAY have an effect on your health through off-gassing (basically tiny particles of the material that are pushed into the air as the material inside the mattress decays).
