Do These Choices For A New Latex Mattress Sound Correct?

Hey everyone, I'm looking to buy a new mattress and have been doing my homework for the past couple of weeks and I would like to get some feedback from people with experience. I know I want a Latex mattress most likely 100% natural as I am trying to steer clear of any possible toxic man made chemicals. I'm 5'7" 130lbs and mostly a side sleeper though I do move from side to side and sometimes sleep on my stomach or back.I am currently sleeping on a hardside 70% waveless waterbed and find it comfortable but I need more support.
I do like how memory foam contours my body but hate the smell and caustic nature of the stuff. I've talked to Shaun at Sleepez and they are running a special for an 8" mattress with Dunlop cores and a talalay top. He recommended that because of my size and sleeping patterns that I go with a med and soft Dunlop core 3" of each and a soft 2" Talalay top. He also recommended that I could go with all three cores of blended Talalay( for the same price) but with cores firm,medium and soft. I could also get 3,100% natural Talalay pices of firm,med and soft without a cover and see how that feels. I could then buy a cover after I know that is the right configuration for me but that would cost more money. I was just wondering what you all thought about my choices. Are the pieces I've been told should be comfortable for me correct and which of my choices would be the most beneficial for me? Thanks for any help:)
