I concur with the recommendation of latex.
I am using a 3/4" latex topper with a 1 ½" or so wool mattress cover on top of the latex, as the very top layer. It's working very well for me.
I MIGHT try a 1" softer latex on top of that, or try replacing the ¾" with 1".
Here's the cheapest source for 1" latex I can find:

Let me know if you find a cheaper one.

You can find a .9 inch Dunlop topper from foamorder.com, for about $125 (if you're looking for Dunlop). It's marketed under 'natural sense' latex.

With the Dunlop I'd go with the 'soft' (they don't provide an ILD, though i was told 'soft' was about 24), as it tends to be a bit firmer than Talalay. I do prefer Talalay, though, which you can get from foambymail. I'd go with the 'soft' talalay, too.

And if that ends up being a little too soft, you could put medium under it.  Or get medium, and if it's too firm, add an inch of soft.  Most people seem to choose 2" of latex topper, so one piece at a time might be the way to test it out.  I really like my soft talalay 1" topper from FBM, and just bought another one.  On the other hand, I dislike a firm mattress.  :)

Got the 1" topper from thefoamfactory.com   Bed Seems fine now.   I have it under a mattres cover and pad.  At this time I will leave as is . We like the feel. But will the latex wear out in time.

Weird... the foam factory is the same as foambymail, except that thefoamfactory.com gives free shipping for orders over $75 (at this time; September 29, 2009 )

Wonder why they have 2 sites with 2 different policies?
