such as this one:

http://www.amazon.com/CottonFresh-Standard-Mattress-Cover-KING/dp/B000NGRPD6/ref=sr_1_12?ie=UTF8&s=home-garden&qid=1268665190&sr=1-12

it is 100% cotton.  Does it matter which kind of latex whether it can be placed inside the cover or not?  I'm looking at Flobeds Talalay but I'm not set on anything yet.  thanks.

I don't see any reason why it wouldn't be okay. Regular mattresses have poly foam in them which doesn't breathe, and usually also include polyester material around it... I think it would certainly protect the latex and should be okay...

But on the other hand, they say latex is anti-dustmite, so not sure it's necessary to use a cover...

Don't quote me on any of the above, I'm just making an educated guess.

Paging Budgy again...
