Want to go latex-we live in a rain forest

We have loved our Tempurpedic Classic king mattress, but are on the verge of the third replacement--the last two lasting only 2 months before a huge depression on my husbands side qualifies for replacement. We tried on this last one to combat our dampness by using a dehumidifier as it aired out in our guest room, ( those horrific smells for a long time), and covered it with a dust mite cover to try and cut down on moisture absorbed and the smell, but to no avail. Our average humidity here in Hawaii is 70-85% in the house. My husband is big-6'1" and 250 lbs, I 5'6" and 185, so we are not light weight.
We want to utilize the foam base of the Memory foam mattress, and use new Latex toppers to build something that is soft and resembles that wonderful feel of sinking in of the memory foam that does not want to seem to hold up with our high humidity and weight issues.
We are advised that Latex is impervious to humidity and weight issues.
Learned a lot from the old posts, but unlike so many, we like soft feel, and not to jiggly so I wake the man up when I roll around.
What would you suggest?
I understand that Dunlop is firmer than Talalay, even the same ILD.
Shaun @SleepEZ suggested that only medium(30-32 ILD) would hold up for us fatties, and 3 inches might be enough.
I am afraid it will be too hard.
Would 2 inches of soft-14-18 on 3 inches of medium give us the soft feel we are looking for?
Will the soft collapse on us quickly?
What to do????

1st-- latex feels NOTHING like memory foam. You can't duplicate the feeling at any ILD because the two foams have very different characters. MF is a slow recovery foam. Latex recovers immediately. It is very resilient. I don't want to discourage you against trying latex, but don't expect it to feel the same.

If you have a choice I would go with the Dunlop because it is less bouncy than Talalay. I'm not sure about the 30-32 over a firm base if you are looking for a soft feeling. SleepEZ's designations run on the high end of the range and 30-32 is closer to medium firm. I think you will like a 24-26 or even a 20 better, but Shawn might be right about soft foam not holding up well under all that weight.  Forget the 14-18 foam. A lot of places stopped carrying it because it didn't hold up at all.  

You might have to build this up, but don't go any softer than 20 over a 30-32 core.  Essentially you are building a bed over a firm PU base and it may take a little trial and error before you find the most comfortable combination.

Thanks, is the latex impervious to humidity?
Will anything give us that feeling of sleeping on a cloud of marshmallows that will hold up?
Is there an odor to latex?
