Where to buy Twin Sized zipper cover for DIY bed project?

Thanks to all of you for your help on this forum! I am cutting an original Eastern King size Tempurpedic we no longer use for my kids bunk bed. I'm wondering the most affordable place to buy two zipper covers for the foam mattress once I cut it? Any links you have would be helpful. Also, can I use a standard edged large kitchen knife to cut it? I don't have an electric knife.
