OK which one do i get, i want soft but not too soft, but error on the soft side i guess...i find the costco latex mattres that I bought to be on the firm side even though i have it on the soft side, as it is shipped soft side up

good luck, I found my 2 inch topper hard as well! make sure you can send it back? i haven't called them yet but am getting a cheap bed from foambymaul.com.
 
Similar to you, my Gardner Mattress all latex mattress was too firm after I had already done one exchange from their "medium" latex bed. Since I weigh 260 lbs I decided to top off my too firm mattress with another 3 inches of "medium"--24-28 ILD from FoamSweetFoam. I went with them for the 100% natural Latex International product which some said was a bit firmer than the blend. So far I am very happy with my puchase. It's soft but still quite supportive over the firmer base layers I already had. I wanted that "plush" feeling without it being too soft and sagging. I might have been able to get away with only 2 inches but didn't find a source I trusted at the right price. The FSF price for 3 inch toppers is $400. which includes shipping and a 30 year warranty. Sometimes you get what you pay for.

Why does it have to be latex? I always hated Latex as a comfort layer. One option would to just get soft conventional foam and even though it breaks down faster..it's very cheap to replace.

Doesn't have to be latex but I have not had good experience with non-latex toppers. They break down VERY quickly (except for Omilon) and latex even in soft ILD provides some support. If you like poly foam (if it works for you) that is great. You're right, it's cheaper. I'm not a fan of latex as a topper either, or have not been in the past but now it's working for me. May be the wool mattress pad I'm using on top of it that makes me like it now, or maybe I've just gotten used to the feel...
