I am looking at getting a Sealy Spring free Beachside...Plush Model. It felt pretty good at the store. The mattress and box spring are on Sale at Mattress Giant now for $1700.
If over time the factory top layer of poly foam breaks down over some time and becomes uncomfortable. If if in fact that does happen, why could I not just cut the mattress open and pull out the 7 inches of core latex inside and then order a new King Talalay topper in the desired firmness. I realize that it may be a bit more expensive in the long run, but I am not comfortable ordering all these latex foam pieces separately for now.

First, the quick answer to your question is:

Yes, probably.
It will probably work as long as the latex is not glued to other cheap crappy foam. If so, you would have to find a way to unglue it. My guess is it will not be glued, so it will probably work.

Now, my 2 centavos:
Since this is a "Plush" model, my guess it that it has a bunch of cheap polyurethane foam in it, and it will break down very quickly, maybe within 6 months. Of course it won't break down enough to get a replacement under warranty, just enough to hurt your back.

My suggestion would be to instead buy the firmest model you can find, with the latex inside, and then put your own toppers on it, such as Venus or Sensus memory foam or soft talalay or etc.

Your centavos are what I was also thinking after I wrote the thread. I have access to the firmest sealy from a different source as well. In fact .....quite a bit less expensive b/c nobody wants them.
I may just try it...I don't know much about the toppers you mention...but will do some homework.

mattressmeister, the bottom line is that Sensus is a 5lb density memory foam and Venus is an 8lb density memory foam. I believe Venus is the firmest memory foam you can get.

I love the feel of memory foam but find that it is not supportive enough. The Sensus is supposed to be supportive enough but for me it is not. I'm hoping the Venus will be.
See my new post above for a great deal on it via overstock.com. Both are on sale and you can use the coupon for either or both. I am hoping that a 2" Sensus with a 1" Venus might be just right. (Always looking for the magic combination...)

Note that when you buy toppers at overstock.com, they charge the same price for a King as for a twin, so you may as well order the king and use an electric carving knife to cut it right down the middle and end up with 2 twin size ones that you can double up on, or if you only need a Queen, cut it to Queen size and then use the extra foam to make pillows.

Am looking at the firmest Sealy latex SprinFree King mattreass called the Weybridge and was told it has the following:
1) 5.6" Firm: C6
2) 1.6" Firm: C6
3 1.6" Firm: C6
4) 1.6" Soft: C2
So if I I don't like how it feels, what is my downside if I can get it for a $1000? Could't cut it open and reconfigure the layers with firmer or softer or more and buy a new cover?
Does anyone know if the layers inside are glued? If they are not glued, this is a no brainer, if not.....it could be a mess.
