What latex topper should I start with for mattress surgery?

I think my wife and I have decided to try mattress surgery on our S&F queen size mattress with unbearable body depressions before we break down and buy a new king size mattress. Does anyone have a recommendation on what latex layer we should have on hand before we cut out the pillowtop?
